Lucky Charm Cereal Treats.

Growing up Krispie treats were always one of my favourites. We used to make them with chocolate and mini eggs at Easter. But I think this marshmallow version might be my new favourite.

As they require no baking they're a great recipe to make with the kids. A fun twist on the classic chocolate crispy treats.

They contain not one but two different kinds of marshmallows. Melted mini marshmallows and the colourful dehydrated lucky charms marshmallows that you get in the box.

They make a fantastic no-bake dessert for a party or as an on-the-go snack. Cut them into squares and wrap them in parchment paper for a lunch box snack. They're the perfect nostalgic treat to satisfy any sweet tooth.

Ingredients For Lucky Charm Rice Krispie Treats.

I love an easy recipe and I love one that you can make with only a few simple ingredients even more. And this one for homemade Lucky Charms treats only uses three!

  • Butter - just enough to add a buttery taste and help bring the melted marshmallow together.

  • Mini Marshmallows - the mini ones melt down faster than regular marshmallows and are less likely to burn.

  • Box of Lucky Charms - the crispy cereal adds a crunch as well as the marshmallow-ly goodness.

  • Optional: Some spray oil to grease your tray.

  • Extra Dehydrated Cereal Marshmallow Bits.

Tips and Tricks.

  • Make sure not to overcook the marshmallows as they will get super sticky and make your bars too chewy.

  • Spray your hands or tray with a little nonstick cooking spray before pressing the finished mixture into the pan. This will help it stick less. Another option is to line it with parchment or wax paper.

  • Be careful not to press the mixture into the pan too hard as this can make your bars tough and chewy (not in a good way).

  • Want a thicker rice krispie treat? Double the mixture, except for the cup of cereal you sprinkle on top. Or place in a smaller square 8 x 8-inch tin to cool.

  • Want to be extra fancy? Dip the bottom of each bar on some melted white chocolate and add some green sprinkles to make them extra festive.

How to make Lucky Charms Rice Krispie Treats.

1. Lightly coat a 9x13-inch baking tray with non-stick cooking spray or greaseproof/parchment paper.

2. Take a large pot or heat-proof mixing bowl and add the chopped butter and most of the mini marshmallows.

3. Microwave for 2 minutes.

Don't have a microwave? Make the butter and marshmallow mixture over the stove top using a heat-proof bowl over a large saucepan of simmering water. Be careful not to let the marshmallows brown and burn.

4. Stir immediately until the melted butter and marshmallows combine.

5. Add the remaining marshmallows and the Lucky Charms cereal to your mixture and fold together until fully coated.

6. Add the cereal mixture to your pan and press down gently using a spatula to make an even layer.

Make sure to use a silicone spatula. It will stick less and make it easier to spread out.

7. Sprinkle the remaining Lucky Charms over the top and lightly press down. Any extra marshmallows can also be added.

8. Let them rest for around an hour or until set.

If you're in a hurry pop your rice krispie bars into the fridge for 10-15 minutes to help firm them up quicker.

9. Slice into bars and enjoy.

They make delicious treats for the entire family and a lovely after-school snack.

How To Store Leftovers.

Store any leftover gooey marshmallow treats in an airtight container at room temperature. Stack the bars and place a piece of parchment paper between each layer so they don't stick. Keep for up to 3 days.

Want to freeze your bars for later? Place them in an airtight container or zip-loc bag with parchment paper between each layer. Store in the freezer for up to 6 weeks. Defrost to eat.
