175g plain flour
100g butter, diced
40g mature cheddar
25g grated parmesan
25g poppy seeds
25g sesame seeds
1 large egg, separated
Preheat oven 190c/Gas 5.
Line baking tray with baking paper.
Sift flour, add diced butter and combine using a palette knife.
Add the parmesan, cheddar, sesame and poppy seeds.
Add the egg yolk along with 4 tsp of cold water.
Form to a stiff dough.
Roll out on a floured surface and cut into preferred shape.
Place on tray and brush with egg white.
Bake for 15 minutes.
Transfer to a wire rack and cool.
