Parmesan Crisps

I know, I know, it's another cheesy biscuit party snack. I can't help it. I love them. I'd eat them all day every day if they weren't 98% cheese and probably really bad for me.

Ingredients (makes around 30 biscuits)

100g Grated Parmesan

2 tsps Sesame Seeds

2 tsps Poppy Seeds

Preheat oven to Gas 6 or 200C.

Mix together the grated Parmesan, poppy seeds and sesame seeds.

Next cover a baking tray in greaseproof paper.

Using a round biscuit cutter sprinkle in a heaped teaspoon of the cheese mixture.

Repeat and fill the rest of the tray.

Bake for 5 - 10 minutes until crisp and golden.

Leave to cool before very carefully removing with a palette knife.

I want to say these Parmesan crisps are really easy to make and they are but a little trial and error was needed before I got them just right. If the Parmesan was too thin it burnt quickly and crumbled as I tried to slide them off the greaseproof paper (see below). Too thick and they ended up more chewy than crisp. So be patient and make a trial batch first. I promise they're worth the effort.
