Everyone needs a few no fail recipes they can rely on. I have two, this amazing baked cheesecake and this always impressive pavlova. I've made these countless times and they've always turned out perfectly. I think I'll be adding this magic custard cake to my list.

I found this recipe while trawling Pinterest. Don't be put off by how runny the mixture is. It's definitely much more like a batter than a traditional cake mixture. The magic part of this recipe happens as it bakes. The batter separates to form three layers, a fluffy sponge on top, a wobbly baked custard center and a firm base.

Mine did need a good hour to bake so make sure to give yourself some time. I used the sixty minutes it was in the oven to tidy up all the mess. This is the part were I always wish I was tidier.

Top tip. Make sure the cake has completely cooled before you start cutting. Some of my pieces did start to crumble as I sliced but a dusting of icing sugar helped cover up any cracks.
