This recipe combines two of my absolute favourite things, popcorn and Rolos. If you’re a fan of those gooey caramel-filled chocolates then you’re going to love this. It’s an incredibly delicious and decadent treat. The ultimate party snack!

To make this tasty popcorn first you need to make a simple caramel by boiling some syrup, brown sugar and butter together. Next, you smother the popcorn in your caramel sauce and bake it in the oven for the perfect crunchy coating. Drizzle with melted chocolate and top with some Rolos and you’re good to go.

The whole process does take around an hour but I promise it’s worth it. It can be made in bulk ahead of time and stored in an airtight container. Having people over? Make a big batch and serve it as a party snack or movie night treat.

If you’ve got any extra pop it in a Kilner jar, tie on a ribbon and you’ve got a fun homemade gift. Although if you’re anything like me it’s probably not going to last that long. My advice, make extra! It’s incredibly addictive.

The recipe calls for air-popped popcorn but if you’re stuck in a pinch and need a quick alternative you can use a bag of premade plain popcorn. If you want to go avoid burnt popcorn and unpopped kernels why not try one of these clever popcorn makers.

How to make Easy Homemade Caramel Popcorn (with Rolos):

  1. Preheat your oven to 225 degrees F.

  2. Line 2 large baking trays with parchment paper and spray with non-stick cooking spray.

  3. Divide popcorn between the 2 baking sheets.

  4. In a large saucepan, melt the butter over medium heat. Stir to avoid it turning brown. Add the brown sugar, syrup and salt.

    I recommend using a silicone spatula to stir your caramel as it’s heat resistant and is easier to clean than a wooden spoon.

  5. Bring the syrup mixture to the boil and then reduce the heat. Allow to boil for around 3 minutes or until the sugar thermometer reaches the soft ball stage (238 degrees).

  6. Whisk in the vanilla extract and the baking soda.

    The chemical reaction between the baking soda and syrup mixture will cause the mixture to bubble up.

7. Immediately pour the caramel over the popcorn. Toss gently with a spatula to coat.

8. Bake in the oven for 40 minutes, tossing halfway.

9. Remove from the oven. Lift the popcorn away using the parchment paper and leave until completely cool.

10. Once cooled, drizzle with melted chocolate and sprinkle with Rolos.

11. Allow the chocolate to set before serving or packaging up as gifts.

There’s nothing worse than biting into an unpopped kernel. Here’s a neat little trick you can use so that never happens again.

Pour your popcorn over a cooling rack. The unpopped kernels will fall through and the popcorn will stay on the rack. How clever is that?

How long can does caramel popcorn last?

Caramel corn can go stale if it’s not stored correctly. Store it in an airtight container or ziplock bag at room temperature and it should keep for up to 2 weeks.

Please make sure your popcorn is completely cool before storing. If it’s still warm condensation will form inside your container and you’ll end up with soggy popcorn.
